This latest release from Waterford distillery is the first organic Irish whisky to be certified by the Organic Trust. Gaia 1.1 has been created from Organic Irish barley grown at seven different farms then matured in a combination of casks (42% first-fill US oak, 17% virgin US oak, 18% Vin Doux Naturel – sweet fortified wines – and 23% premium French oak) then bottled at 50% vol.
